Redfish

Redfish are the crown jewel of our inshore waters. These copper-colored bruisers average 20-30 inches but can push 40+ pounds. Look for that distinctive black spot near the tail - it fools predators into attacking the wrong end. They cruise super shallow flats, often with their backs showing, around oyster bars and grass beds. Year-round fishing here, but fall and spring are peak times when they school up. What makes them special is their bulldogging fight - they'll drag you around for ten minutes. Plus, they eat almost anything and aren't leader shy. The meat is firm with a mild, slightly sweet flavor that's hard to beat. My go-to tip: when you see their backs in shallow water, cast well ahead of where they're going, not where they are. They spook easily but come back to the same spots.

Sea Trout

Spotted sea trout, or "specks" as we call them locally, are beautiful silver fish covered in black spots. They typically run 14-24 inches and love our grass flats in 2-6 feet of water. You'll find them around oyster bars, creek mouths, and anywhere shrimp and small baitfish gather. Spring through fall are best, especially during moving tides at dawn and dusk. Cooler months they school up in deeper channels. What makes them special is their delicate bite and acrobatic jumps when hooked. The meat is tender and flaky - just don't overcook it or it gets mushy. They're also one of the few fish that "bark" underwater using their swim bladder. Pro tip: use a popping cork with live shrimp about 18 inches below. The noise draws them in from a distance.

Summer Flounder

Summer flounder are fascinating flatfish that live sideways on sandy bottoms with both eyes on their left side. These "chameleons of the sea" change color to match the bottom perfectly. Most run 15-20 inches, but we see some pushing 26 pounds. They're ambush predators that bury in sand waiting for baitfish, crabs, and shrimp to pass by.
